Ingredients
- 1 cup oats
- 2 cups water
- 1 cup coconut milk
- 2 eggs
- 15g Soulistic Bone Broth Cacao Powder (1 serve)
- Honey, to taste
- 1 tbsp peanut butter (or more, no judgement)
- ½ cup wild berries
- 3 tbsp Greek yoghurt
Method
- Add the water, coconut milk and Soulistic to a saucepan and whisk together.
- Stir in the oats and cook over medium-high heat until the mixture starts to heat up.
- Reduce the heat to low-medium and cook until most of the liquid has been absorbed.
- Drizzle in some honey and stir through, then remove the oats from the heat.
- In a separate bowl, whisk the eggs. Add a spoonful of the hot oats to the eggs and stir well, this gently warms the eggs and prevents scrambling.
- Slowly pour the egg mixture back into the saucepan, stirring constantly until the oats become creamy and silky.
- Spoon into a bowl and top with Greek yoghurt, wild berries, and peanut butter. Enjoy immediately.
