Bone Broth Cacao Marshmallows

These soft, fluffy marshmallows are a delicious way to bring the cosy flavour of bone broth hot chocolate into a homemade treat. Made with Soulistic Bone Broth Cacao Powder, honey and vanilla, then dipped in dark chocolate and finished with flaky sea salt, they are a nourishing twist on classic hot chocolate marshmallows.

Enjoy them with a warm mug of your favourite healthy hot chocolate, or eat them straight from the fridge for a chocolatey snack.

Ingredients

Method

  1. Bloom the gelatine: Sprinkle the gelatine over 100 ml of cold water and leave for 5–10 minutes to bloom.
  2. Make the cacao syrup: In a small saucepan, combine the remaining 100 ml of water, honey, Soulistic Bone Broth Cacao Powder and vanilla extract.
  3. Place the saucepan over medium heat and whisk until smooth. Bring to a gentle boil, then immediately remove from the heat.
  4. With a stand mixer or hand mixer running on low speed, slowly pour the hot mixture into the bloomed gelatine.
  5. Increase the speed to high and whip for 6–8 minutes, until the mixture is thick, glossy and fluffy.
  6. Immediately pour the mixture into a lined or lightly greased tray and smooth the top. Refrigerate until completely set.
  7. Melt the dark chocolate.
  8. Cut the marshmallow into bite-sized squares, dip each piece into the melted chocolate and place on a lined tray.
  9. Sprinkle with flaky sea salt and refrigerate until the chocolate has fully set.

Top tip for light, fluffy marshmallows

Do not over whip the mixture. Stop once it reaches soft peaks and slowly ribbons from the whisk. If it becomes too stiff, it will be difficult to spread and the finished marshmallows will not be as light and fluffy.
