Eliza’s simple AF Marshmallow Recipe
One of my favourite things in life is finding recipes that are stupidly simple to make but feel like a huge flex.
The dishes that make your friends go, "ELIZA, this is insane... you made this?!" Best. Feeling. Ever.
This marshmallow recipe is one of those recipes.
And with winter officially here, it felt like the perfect time to share it.
The best part is that Marshmallows are actually kinda good for you. (Winning!)
Traditional homemade marshmallows are basically just water and gelatine.
Gelatine comes from collagen, the protein naturally found in the skin, bones, and connective tissues of animals.
When these tissues are slowly cooked (like when making bone broth ), the collagen breaks down into gelatine, which is packed with amino acids that your skin, hair, nails, joints, and gut absolutely love.
And because Soulistic is made with slow-cooked bone broth, it's naturally packed with gelatine too.
So a cup of Soulistic topped with homemade marshmallows is basically a gelatine cocktail. (Glowing skin from a delicious hot choccy? Say less )
Eliza’s simple AF Marshmallow Recipe
Ingredients
- 1 cup cold water, divided
- 3 tbsp powdered gelatine (grass-fed, of courssseee)
- ½ cup maple syrup
- 1 tsp vanilla extract
- Pinch of sea salt
- 2–3 tbsp tapioca flour (for dusting)
Method
- Pour ½ cup of the water into a mixing bowl and sprinkle the gelatine over the top. Let it bloom for 5 minutes.
- In a saucepan, combine the remaining ½ cup water and maple syrup. Heat gently until steaming (not boiling).
- Carefully pour the warm maple mixture into the gelatine while mixing. Add the vanilla and sea salt.
- Whip with an electric mixer for 8–10 minutes until thick, fluffy, and marshmallow-like.
- Pour into a lined container and smooth the top.
- Leave on the bench to set for 4–6 hours (or overnight). If your kitchen is particularly warm, pop them in the fridge instead.
- Slice into squares, then lightly dust all sides with tapioca flour to stop them sticking together.
- Try not to eat the entire batch in one sitting.
