Cacao (often spelled “cocoa” in processed form) is the raw, minimally processed ingredient that gives us chocolate.
Beyond its rich flavour cacao has a fascinating history, unique health benefits and a complex journey from pod to the treats we love.
Cacao comes from the seeds (beans) of the Theobroma cacao tree, native to tropical regions of South America.
The word Theobroma means “food of the gods,” reflecting how highly ancient civilisations valued it.
After harvesting, the seeds are fermented, dried, and processed into various forms such as cacao nibs, cacao powder, cocoa powder, and chocolate.
Cacao has been consumed for over 3,000 years. The Olmecs, Mayans, and Aztecs used cacao to make a bitter ceremonial drink, often flavoured with chilie or spices.
It was so valuable that cacao beans were even used as currency in some ancient Mesoamerican cultures.
Chocolate as we know it today evolved in Europe after cacao was introduced in the 1500s, where sugar and milk were added to create sweeter, more palatable versions.
Cacao is considered a nutrient-dense food, especially in its raw form. It contains:
