Soulistic Oats
This is SUCH a great way to dodge the egg ick while packing your oats with extra protein. It's also another reminder of just how versatile Soulistic really is.
Huge shout-out to Leah, who suggested mixing the eggs in at the end. Absolute game changer.
Soulistic Oats
Ingredients
- 1 cup oats
- 2 cups water
- 1 cup coconut milk
- 2 eggs
- 15g Soulistic (1 serve)
- Honey, to taste
- 1 tbsp peanut butter (or more if you're like me)
- ½ cup wild berries
- 3 tbsp Greek yoghurt
Method
-
Add the water, coconut milk and Soulistic to a saucepan and whisk together.
- Stir in the oats and cook over medium-high heat until the mixture starts to heat up.
- Reduce the heat to low-medium and cook until most of the liquid has been absorbed.
- Drizzle in some honey and stir through, then remove the oats from the heat.
- In a separate bowl, whisk the eggs. Add a spoonful of the hot oats to the eggs and stir well (this gently warms the eggs and helps prevent scrambling).
- Slowly pour the egg mixture back into the saucepan, stirring constantly until the oats become creamy and silky.
- Spoon into a bowl and top with Greek yoghurt, wild berries, and peanut butter.
Trust me, these are creamy, chocolatey, protein-packed, and taste nothing like scrambled eggs. SUCCESS
